There’s nothing like breakfast already being made when you wake up! NOTHING LIKE IT! Listen.. I’m not a morning person, so any ease of morning tasks… sign me up. Breakfast is no exception.
Making breakfast in the crockpot overnight is perfect for those holiday mornings or honestly… ANY school morning! I have three kids and this feeds my family of 5 for AT LEAST two mornings! Not only is that saving time and stress… but it cuts cost of food down. This is a win-win situation.
Simply fill your crockpot with any breakfast meat (or no meat) and any vegetable you want. Go classic with onions and peppers. Or other tasty options: broccoli, cauliflower, spinach and mushrooms! (I’d recommend sautéing the mushrooms before adding for a yummier texture). Add in your favorite cheese and a 30oz bag of frozen hash browns and mix. Whisk your eggs, milk, salt and pepper in a bowl and pour on top. Top with more cheese, put lid on, and set on low for 7-8 hours. Forget to do this last night? No biggie… Set on HIGH for 2 1/2-3 hours! DONE!
Now go have a cup of coffee and relax.

Crockpot Breakfast Casserole
Equipment
- 1 Crockpot
Ingredients
- 12 large eggs
- 1 lb breakfast sausage cooked or bacon
- 1/2 cup diced ham
- 1 32oz bag frozen hash browns
- 4 green onions diced
- 1/2 red pepper diced
- 1/2 poblano diced
- 2-3 cups cheddar cheese shredded and 1/2 cup reserved
- 1 cup heavy cream half and half or whole milk
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- If your sausage isn't already cooked, be sure to cook it to the package instructions.
- Add meat, veggies, hash browns, and 3/4 of the cheese to the crockpot. Mix until well combined.
- In a medium bowl, add eggs and whisk until well combined. Then add milk, salt and pepper and whisk again to combine well. Evenly pour over the hash browns.
- Top with the remaining cheese.
- Place lid on top. Set to low for 7-8 hours or high for 2 1/2-3 hours.
- Top with more green onions and enjoy!
